I have been a little pie-crazy lately. Well, pie crazy doesn't even give you an idea on how pie crazy I have become. I have many more pies I haven't shared with you. I used to be afraid to make pies and pie crust was too difficult. So I baked other treats and for many years the only pies I made were chicken pot pies. But since I have been over running CKK with pies (more to come) I decided to take a short pie break and we will return to our normally scheduled program of cupcakes.  And now back to the show...

Buttery Coconut Cupcakes for Calamity Kate's Birthday

Today is my birthday and I wanted to share a few of my favorite desserts with you. 
 I made this cupcake just a few weeks ago and they were great. I love how rich and super flavorful the cake is and oh my the butter cream is to die for! Creamy and silky and of course full of the best things in life…butter, sugar and coconut. I did put much more almond extract in than recommend, I love almond extract with coconut. These amazing cupcakes have not just 3 or 4 sticks of butter, but 6 stick of awesome, creamy butter goodness!

A Perfect Dinner

This is one of my favorite dinners:
2+ years ago I went to my parents hours for dinner. That dinner was and still is one of my favorite meals I have ever eaten. It was light, but so filling and most of all satisfying. I have made this salmon recipe twice since that first dinner but I make the rice salad a few times a year. Enjoy it and have a wonderful weekend!
