Bribe me with Brownies… Please

I spent the few days before my dad's surgery baking. I made cookies and these awesome brownies.  I knew we would all need to nosh (snack) while in the waiting room and the remainder of the treats would make a great gift/bribe for the nurses. As you guys have read, I have spent a lot of time in hospitals and to get an extra pudding its no problem but if you want extra hot blankets or a VCR (remember my references are from 1995) or a different meal a little gift to the nurses goes a long way. In this case all we needed the nurse to do was show us how to change the temperature in the room. But everyone loved these brownies.
They are very moist, very dense and extremely rich with a crusty and crumbly top.  I only had a bite and it was enough chocolate for me the day… almost. I also love this  cookbook, 100 Recipes Every Woman Should Know. It has great recipes with the craziest names, I will defiantly be sharing more with you from this great cookbook. Cheers


Bribing Nurses with Brownies… 
How to get what you want and need in the hospital
from 100 Recipes Every Woman Should Know

Three 1-ounce squares unsweetened baking chocolate
1 stick unsalted butter
2 large eggs
1 cup sugar
3/4 teaspoon pure vanilla extract
1/2 cup all-purpose flour

Preheat the oven to 400°F Grease and 8 x 8" glass or ceramic baking pan

In a double boiler set over simmering water, melt chocolate and butter.
(If you don't have a double boiler place the chocolate and butter in a metal mixing bowl over a pot of barely simmering water making sure not to get water into the chocolate)
Removed and melted chocolate mixture from the heat and let cool slightly.

In a large bowl with a mixer at medium speed, beat the eggs until smooth. Gradually add the sugar beating until very thick and pale yellow about 6 minutes. Add vanilla and the melted chocolate mixture and stir until blended.
Gently fold in the flour until just combined. Scrape batter into the prepared pan. Bake 14 to 16 minutes, until a toothpick inserted into the center has moist crumbs attached. Remove the pan from the oven and place it on a wire cooling rack.
Do not over bake; brownies  should be very moist. Cut into nine 2  1/2 inch squares and serve.

  2. Oh no..Parsley Sage. I have been meaning to post this for weeks and just haven't gotten around to it until now. I understand the clutz thing... although I am the only really clutz in my family. Well enjoy these brownies in good health and save some for the clutzy times too. Cheers, Kate
