Chocolate for Breakfast

Happy Memorial Day!

Oatmeal is a healthy breakfast that is pretty good, but this chocolate oatmeal is a sinful and relatively healthy breakfast treat. I love to serve this oatmeal for a breakfast treat or a late night snack. Chocolate oatmeal is creamy and sweet with a touch of spice.  It is perfect for summer when we have abundance of fresh mint and strawberries. The strawberries and mint add some fresh and bright tones that enhance the richness of the chocolate.  You could also add chocolate chips, Nutella or bananas to make this oatmeal even more of a treat! Kids of all ages will love chocolate for breakfast!

Spicy Chocolate Oatmeal
serves 2
1 cup oatmeal, Quaker Oats Old Fashioned Oats
1 3/4 cup water
1/4 cup milk
2 teaspoons unsweetened cocoa powder 
1/2 teaspoon vanilla extract
1/2 teaspoon chili powder
1/2 teaspoon cinnamon
1/8 teaspoon salt
brown Sugar
sliced strawberries 
fresh mint


Boil water and salt in a medium skillet and in vanilla and oats. Cook for about 5 minutes. Add in the cocoa powder, cinnamon, milk and chili powder and stir well. Poor oatmeal into 2 bowls and add in the strawberries and brown sugar. Top with mint and enjoy!
