Raccoons no S'more

S'mores always make me think of summer and the last year I was in Girl Scouts and end of the summer fateful camping trip (sounds like a Nancy Drew Book.)
My girl scout group went to Turkey Run State Park for a camping trip. This trip was a disaster from start to finish. Starting with raw hobo dinners that didn't cook to being surrounded by what can only be described as a herd of raccoons trying to get into our marshmallows. These same raccoons followed 15 screaming Girl Scouts and the non-screaming troop leaders back to our cabin. The raccoons spent the night outside our door, I guess they were expecting food. So we spent the night locked in a cabin. In the morning, we all ate breakfast fast and packed up to drive home. It was a crazy trip and the highlight was sitting around the bon-fire eating s'mores and the nature center.
These ooey-gooey S'mores are sure to be a hit with people and  raccoons of all ages, no campfire needed. I was wandering blogs last week and found Pinch Of Yum and these S'more bars. I had to make them. I brought them to work and, of course my dad got into them;  he said, "They were delicious and had just the right texture for a satisfying chew.

S'more Bars

1 bag (10.5 oz) miniature marshmallows (5 1/2 cups)
1 1/2 cups milk chocolate chips (9 oz)
5 tablespoons butter or margarine
1/4 cup light corn syrup
1 teaspoon vanilla
1 box (13 oz) Golden Grahams cereal (8 cups)
2 drops butter flavoring- get it here
1/8th teaspoon chili powder, optional

Grease 13×9-inch pan with butter. Reserve 1 cup of the marshmallows. In a large saucepan, melt the chocolate chips, butter, corn syrup and remaining marshmallows over low heat. Stir until completely melted. Remove from heat; stir in vanilla.
Pour cereal into saucepan. Stir until coated with the melted chocolate mixture. Stir in remaining 1 cup marshmallows.
With buttered back of spoon, press mixture in pan. Cool at least 1 hour or until firm. Store loosely covered at room temperature.Top with chocolate chips and marshmallows- optional.

  2. Great story about camping. We all have camp stories. And these S'mores would be great to get a bunch of us together to share our camping stories.

  4. We went camping one time and I really wanted to see a raccoon. I'd never seen one outside of a zoo. So I laid out a trail of pieces of bread and I lay in the doorway to wait. Finally at about 10:00, they came calling. I sat so still and they came right up almost face-to-face with me. Then one of them started to come into the room and I freaked a little and scared it off. But it was so cool to see them up that close.
