Dreaming of Summer...

Dear Friends, there are 2 more days to enter to win a free cookbook. Click here to enter.

So I have been dreaming of summer and I can not wait to start planting this year. I love to have a fresh herb garden and freshly grown tomatoes, zucchini and cucumbers. I would love to grow watermelon but space is too limited on my new balcony.  I love picking fresh herbs especially when they are for a dinner like this.
This Grilled Garlic and Mint Chicken is so wonderful and juicy. It is just simple hearty food. One of my favorite bits of the chicken is the crispy skin and burst of mint that fills your mouth. I served this with a grilled vegetable salad with balsamic vinegar. Yum!

This is a family favorite recipe, but we haven't made it in a while.  Enjoy!

Letty do's Salad

3 plus years ago I was introduced to this very extraordinary salad and a new friend. A new gal TC, got hired in to work in our office.  We were having a pitch-ins and TC wanted to bring her favorite salad, Letty do's Salad, her families salad. This salad is one of my favorite odd foods. It is such a mix of interesting ingredients. I wasn't sure how it would taste. Some of the ingredients were not normally put together, like sugar and olive oil and uncooked ramen noodles.  But I like to try just about everything.

Calamity Kate's Birthday Month Extravaganza: Week 1

So this is not an April Fools Prank.

I am hosting a month of giveaways to celebrate my birthday!

Just so you know, I am not a birthday celebration person. Well, I am for other people, just not for myself. Its not that I worry about getting older, but I just don't like my birthdays. So I am changing it up and celebrating you during my birthday… the best of both worlds.

Oh, by the way I have another HUGE change planned for Friday April 8th
