Healthy Dinner in Disguise!

OK guys, as promised…Super Silky Skinny Mashed Potatoes with Grilled Pork Chops and Balsamic Apples n'Onions. This makes for one super healthy but very satsifing dinner.
But don't tell anyone how healthy your dinner really  is. 
Absolutly no one will call these potatoes healthy! You can substitute 2 tablespoons of regular sour cream for 1 tablespoon butter for the same healthy but delicious effect.  I like to serve this dinner with a side of applesauce!
Enjoy and eat up, your pants will still fit good in the morning!

Silky Skinny Mashed Potatoes
6 servings and 4 Weight Watcher Points Plus per Serving



5 medium Yukon gold potatoes, pealed and in 6 to 8 pieces
2 Tbsp salted butter
8 fl oz fat free milk
1/4 cup natural chicken stock
salt and pepper to taste
1/4 teaspoon paprika (optional)


Peel and slice the potatoes. Add to a pot of boiling water and cook until your fork easily goes through the potato. Save 1/2 cup of the potato water and then drain the potatoes. 



Pour the milk and chicken stock into microwave proof mugs and heat for 50 seconds or until hot. Do not let the milk boil. Add the potatoes back to the pot with 1 tablespoon butter and 1/3 of the hot milk. Using a hand mixer, whip the potatoes until smooth. Then alternating between the hot chicken stock and the hot milk, continue to whip while adding a little of the hot milk then a little of the hot chicken stock. When the potatoes are almost to the perfect silky consistency, add the last tablespoon of butter and the paprika. Finish whipping and salt and pepper to taste. Divide the potatoes into 6 servings. 


Optional: this is my family's favorite way to serve mashed potatoes.
Transfer the silky smooth mashed potatoes to a oven safe dish and place into a cold oven or toaster oven. Turn on the broiler and toast the top of the potatoes until medium-golden brown, 10-12 minutes. Serve hot!

Grilled Pork Chops:
3 ounces is 3 Weight Watcher Points Plus 

4 lean boneless pork chops
salt and pepper
olive oil cooking spray


Spray pork chops with olive oil cooking spray and sprinkle with salt and pepper. Grill until the internal temperature reaches 155˚F. Remove from grill and let sit 10 minutes before slicing or serving.



Balsamic Apples and Onions:
1/2 cup is 1 Weight Watcher Points Plus


2 medium granny smith apples, peeled and sliced 
1 large onion, thinly sliced
2 tablespoons balsamic vinegar
1 tablespoon butter
salt and pepper


Add the thinly sliced onions and 1/2 of the apples into a pan with  1/2 butter over medium-high heat. Cook for 5 minutes until the onions are translucent. Add in 1 tablespoon of the balsamic vinegar and cover for 3 to 5 minutes. Turn the heat to medium, uncover and add in the remaining apples and vinegar. Cook for 5 minutes and stir in  the remaining butter. Serve over the pork chops.

  4. I made mashed potatoes on Sunday, but missed this post! My potatoes were, once again, not so wonderful. I will be trying your recipe next time. The whole meal sounds delicious! Janae
